A blistered wood-fired pizza straight out of the oven, sauce still bubbling

Trattoria & pizzeria · Chicago

Serious dough, zero decorum.

Sugo! is a loud room with a wood-fired oven, pasta rolled at dawn and no plans of quieting down. Come for the pizza. Stay for whoever's birthday it turns out to be.

  • Dai!

The room

Loud on purpose.

Long tables, short waits between courses, and an oven that roars louder than your uncle. We seat strangers next to strangers and by dessert they're splitting the last cannolo — that's not an accident, that's the floor plan.

Nobody here whispers the specials. Nobody brings the check until you ask twice. Lunch is a right, dinner is a party, and the vermouth cart knows the way to your table.

The good stuff

Three reasons you'll stay too long.

  1. Wood-fired oven

Four hundred fifty degrees, ninety seconds, zero patience. The oven was here before the furniture and it will outlive us all.

  2. Fresh pasta daily

Rolled every morning by people who take carbs personally. When it's gone, it's gone — come early or befriend a regular.

  3. The good vermouth

The house pour, on ice, with an olive and an opinion. Order one and watch the bartender stand up straighter.

House rule
We time the pizza. We never time the lunch.

Overheard

Straight from the long table

I came for lunch. I left at five. No regrets, some tiramisù.
Dana KowalskiTable by the window, most Fridays
Ordered one pizza to be polite. Ordered a second to be honest.
Marcus ReyesDiavola, extra hot honey
The kitchen sang happy birthday to a stranger twice in one sitting. It was my birthday neither time. Ten out of ten.
